For the mango topping, soak the chia seeds in 200 ml water for a few minutes. Core the mango and cut one half into cubes, finely puree the other.

Place the curd in a large bowl and beat with the milk, mango puree and vanilla sugar with a hand blender until frothy.

Serve in two plates with the swollen chia seeds and the mango cubes.
