Instructions:

For linguine with spinach sauce, wash the spinach and put it wet in a saucepan.

Add a little salt and cook over medium heat for 3-4 minutes.

Drain in a colander and let cool slightly. Finely chop spinach, shallots and garlic.

Heat olive oil in a pan and sauté shallots and garlic until translucent.

Add spinach, cream, herbs and spices and let it boil down a bit. Grate Parmesan, mix with the spinach sauce and season to taste.

Sprinkle pine nuts on a baking sheet and grill in the oven under supervision. Once they begin to brown slightly, remove and pour into a bowl.

Prepare linguine according to package directions and mix with spinach sauce.

Serve the linguine with spinach sauce sprinkled with pine nuts. Sprinkle with Parmesan cheese if desired at the table.
