For the lemon cake, mix eggs with the sugar and beat with a mixer until the foam becomes light yellow. Wash, dry and grate one lemon.

Add the zest to the sugar mixture. Squeeze both lemons. Stir Alsana, half of the lemon juice and cardamom to the sugar mixture. Mix all kinds of flour with the baking powder and slowly stir into the sugar mixture.

Grease a loaf pan and sprinkle with some spelt flour, pour in batter and bake at 170 degrees for about 45 minutes. Test with a chopstick.

If the dough darkens too quickly, turn down the baking heat to 160 degrees and cover the top of the cake with aluminum foil (matte side outside!).

Turn the finished cake out of the pan and turn it over. Allow to cool. Mix the powdered sugar and two or three spoonfuls of lemon juice to make a glaze and brush the cake with it.
