Boil the milk in a pot with butter and a pinch of salt. Stir in the flour and toast briefly. Remove the pot from the heat and stir in the eggs. Mix in the finely chopped ham together with the grated Parmesan, pepper and parsley. In a large pot, bring plenty of salted water to a boil. Using a spoon, make dumplings from the mixture, place them in the boiling salted water and cook gently for about 6 minutes. Lift out, drain and place in the hot soup.
