Heat the broiler. Stir ingredients through in a baking bowl except for the fish. Turn fish fillets in the spice mixture exactly to the other side. Then grill for 10-15 minutes (brush the grill with a little oil beforehand so that the fish does not stick), depending on the thickness of the fillets.

For the all purpose spice, mix the ingredients and keep in a jar with a screw cap.

*) Instead of the Scotch Bonnet Chili you can use a Jalapeno for a milder version.
