For the baked meat pancakes, first bake out the pancakes and cut the onion into cubes and the mushrooms into slices. Fry the onion in a pan until translucent.
Add the mushrooms and let the liquid boil away. Then add minced meat and again let everything stew on low heat.
Season to taste with a little salt, pepper and herbs de Provence. The mixture should not be too dry and crumbly, but also not too much liquid should come out of the pancakes later.
Pour the mixture into the pancakes and roll them up. Place them side by side on a baking sheet or in a baking dish and sprinkle with the grated cheese.
Depending on the amount of filling and the size of the pancakes, you will get about 8 meat pancakes. Bake in the oven at 200 degrees until the cheese has melted.
For a nice browning you can additionally turn on the grill at the end.
