For the baked Kornspitz, cut the Kornspitz once lengthwise. Mix the tomato paste with the water until smooth and season with salt, pepper, garlic, chili flakes and thyme.
Spread the sauce on the grain tip halves, spread the cottage cheese on one grain tip half and top with 2 slices of Gouda.
Cover the second grain tip half with the remaining Gouda and the mountain cheese. Bake in the oven at 200 degrees convection for about 15 minutes or alternatively put in the microwave for half a minute. Sprinkle the baked Kornspitz with fresh pepper and serve.
