1. in a small saucepan over low heat, melt butter in maple syrup. Meanwhile, place cinnamon, sugar, cardamom, ginger and cloves in a large bowl. Fold in the liquid butter-syrup mixture with the whisk of a mixer. Add the water as you go. Whisk until the sugar is completely dissolved.
Sift the flour and baking powder on top. Beat with the dough hook of the mixer until a smooth dough is formed. Shape into a ball, wrap in cling film and leave in the fridge for about 24 hours. 3.
Preheat the oven to 175 °C (convection oven 150 °C). Line a baking tray with parchment paper. Knead the dough repeatedly on a floured surface. Now roll out to a thickness of about 3 mm.
Cut out stars close together and place them on the baking tray. 4.
Bake the cookies for 10 minutes. Cool completely.
5. mix the powdered sugar with the juice of one lemon. Dab ginger stars with a tiny bit of sugar mixture and place as many as you like on top of each other.
Decorate the top star. This is placed on top with a blob of icing.
