For the spelt stew, soak the spelt in water for one night.
A day later, cut the carrots into sticks. Cut the celery stalks in half lengthwise and slice diagonally into 2 cm wide strips.
Cook the soaked spelt for 7 minutes over medium heat. Add soup, coriander, chopped lovage and carrots. After 5 min of cooking, mix in the celery.
Simmer over medium heat for 8-10 min until vegetables are al dente.
Fold in marjoram, parsley and butter. Season with salt and pepper. Grate cheese and sprinkle over stew.
Decorate the stew with celery leaves.
