For the crispy shrimp wantans, first hard boil the fresh quail eggs in water for 3-4 minutes. Chop the prawns, spring onions and water chestnuts very finely and fry them briefly together in a little oil. Season with salt, pepper and a dash of soy sauce and remove from heat. Stir in a small dash of sesame oil and the chopped coriander.

Place Wantan sheets on top and spread some of the shrimp mixture on each, place a quail egg on each and fold the dough together. To do this, moisten the edges with water and fold the dough into a triangle, press firmly together and pull the two opposite ends toward each other again and press firmly in the center. Or tie the dough together with chive stalks to form a little bag.
