Maybe your new favorite bean dish:

Soften the potatoes in 20-30 min. In the meantime, chop the garlic and onions very finely. Chop the kitchen herbs as well.

Peel the potatoes and mash them while they are still hot. Fold in the garlic and onions. Mix the kitchen herbs with the sour whipped cream and fold both into the potato cream. Season with salt and pepper to taste.

Variations:

The cream also tastes good with other herbs such as basil or savory. Also delicious fresh green peppercorns or a little bit of freshly grated horseradish.
