For the covered apple pie, make a shortcrust pastry from the ingredients, let rest for half an hour,

Divide the dough in half, roll out the first half thinly and place it on a greased, floured baking sheet, cover it with the apples previously mixed with cinnamon, lime juice and the grated almonds.

Roll out the second half of the dough, cover the apple mixture with it. Brush with beaten egg and bake the covered apple pie at 180 °C top/bottom heat for 50 minutes.
