Instructions:

For the chocolate parfait, melt the chocolate in a water bath, then let cool. Separate the eggs. Cream powdered sugar, cinnamon and yolks with chocolate. Whip the cream until stiff.

Beat egg whites until stiff, then fold in both very carefully. Pour the mixture into ramekins lined with cling film and freeze for at least 6 hours.
