For the chicken breast on tomato sauce, preheat the oven to 190 degrees. For the tomato sauce, cut the tomatoes crosswise at the stem end and let them steep in boiling water for a few minutes.

Place the tomatoes in ice cold water and then gently peel off the outer skin. Using a blender, puree the skinned tomatoes into a sauce.

Salt and pepper the chicken fillets and place them in a baking dish (greased with a little olive oil) and sprinkle with rosemary and garlic. In a saucepan, heat the butter until it is liquid. Then stir in the flour briskly and pour in water quickly.
