For the cauliflower soup with cress, divide the cauliflower into roses and wash. Cook in lightly salted water for 15 minutes. Then puree.

Mix the egg yolks with the whipping cream and thicken the soup with it, do not boil. Season with pepper and a pinch of nutmeg.

Chop the cress, sprinkle the carfioli soup with cress and serve.
