Instructions:

Rinse and clean the spring onions and cut into pieces. Season breadcrumbs with salt and cayenne pepper.

Dab the spring onions, turn them in flour to the other side, drag them through the eggs mixed with milk and then roll them in breadcrumbs. Then fry onion pieces very briefly, swimming in hot fat, until done.

Breaded spring onions are delicious hot or cooled with beer and wine.
