Try this delicious cake recipe:

Stir together ricotta, milk and egg yolks in a baking bowl.

Sift flour and baking powder over mixture and fold in.

Whip the egg whites with a pinch of salt until beaten and fold into the ricotta mixture.

Heat a large coated frying pan with a tiny bit of clarified butter. Spoon a large spoonful of batter per hotcake into the skillet and evenly spread a few blueberries on top. Bake over not too high temperature for 2 min until the bottom is golden brown, then turn to the other side and continue baking until golden brown and cooked.

Place 3 cakes on a plate, add a little yogurt, drizzle with maple syrup and dust with powdered sugar.
