For the apricot chutney with thyme, pit the apricots and cut into quarters. Bring to the boil with the remaining ingredients and continue to simmer over low heat until the liquid has almost evaporated.

Season again with salt, sugar and a little gin. Fill into jars, close well and store the apricot chutney with thyme in the refrigerator.
