For the apricot cake, separate the eggs and beat the snow with the powdered sugar until stiff.

Preheat oven to 150° (convection oven).

Cream margarine, egg yolks, granulated sugar and vanilla sugar.

Then fold in flour and snow alternately.

Spread the dough on a baking tray and place the apricot halves on top (press down very lightly, otherwise they will disappear into the dough during baking). Baking time for the apricot cake is about 30 minutes.
