For the 3-cheese dip, first grate the cheeses separately. First heat one type of cheese with a third of the whipped cream until the cheese is completely melted. Season with pepper. Pour into a large enough bowl and set aside.
Repeat the same with the next type of cheese. Carefully empty this onto the first thickened cheese dip. The two dips should not mix for now.
Do the same with the last type of cheese.
Serve the 3-cheese dip. During dipping, the cheeses will then mix.
