If necessary, briefly rinse the chanterelles under running water and drain. Chop shallot and garlic, cut ham into strips.

Melt butter in a frying pan, add ham and roast until crispy. Add shallots, garlic and sage and fry for 2 minutes. Add chanterelles, season lightly with salt and sauté for 10 minutes.

Stir frequently. Add cream cheese and ground pepper and stir gently. Mix the whipped cream with the same amount of water and add to the mushroom and cheese sauce until the desired consistency is reached.

Season again with salt and freshly ground pepper, stir in the chopped parsley and pour over the green noodles arranged on plates. Sprinkle with the rest of the chopped parsley and bring to the table.
