Caramelize sugar in a saucepan for 5 min. at low temperature. Grease fireproof baking dish with butter. Add caramel mixture and line the baking dish with it. To do this, turn the baking dish as you pour it in so that the caramel mixture can settle. Set aside. Rinse a saucepan with cold water. Heat the whipping cream in it. Stir vanilla sugar, egg yolks, eggs, salt and lemon zest together in a baking bowl. Add 2 tablespoons of hot whipping cream. Whisk into the boiling whipped cream. Pass cream through a sieve. Then pour into the caramelized baking bowl. Place the baking dish in the water bath in the heated stove on the middle shelf.
