Mix the flour with the baking powder. Prepare a part of it with salt, sugar, lemon zest and buttermilk to a firm dough, incorporate the butter broken into pieces, the raisins and the remaining flour.
Roll out the dough to a thickness of one centimeter, cut out 6 cm diameter discs, place on a greased baking tray, brush with milk and bake in a heated oven (approx. 220 °C ) until light brown (approx.
10 min).
Serve warm, with butter and jam for tea.
