For the salmon filo pastry packets, preheat the oven to 200°C degrees. Cut the salmon fillet with a fork. Add the parsley, lemon juice and spring onions. Season the mixture with salt and pepper.

Butter each sheet of filo pastry and place a second one on top. Then cut the dough into squares of about 10 cm.

Place a teaspoon of the salmon filling on one dough square. Brush the edges with melted butter and shape into small packets.

Place the packets on a greased baking sheet and bake the salmon packets of filo pastry in the oven for about 15 minutes until golden brown.
