Season the meat well with salt, pepper and mustard. Brown well on all sides in hot oil or lard (do not pierce with fork when turning, juice loss!). Place fresh herbs around the meat and roast in the preheated oven at approx. 120 °C to the desired degree of doneness. It is best to use a roast thermometer for this. Carve the roasted meat, arrange on preheated plates with side dishes of your choice and serve quickly.
