To make the peppers with feta filling, first cut the stem out of the peppers in a circle using a sharp kitchen knife. Scrape seeds and septum out of the peppers with a baller.
Roast the pine nuts without fat in a pan.
Preheat the oven to 190 °C.
For the filling, place feta in a bowl and mash with a fork. Mix in pine nuts, whipped cream, egg yolk and pepper.
Season the cheese mixture with salt and pepper if necessary and then fill into the pods.
Place the peppers in an ovenproof dish, drizzle with a little olive oil and bake for 15-20 minutes.
Serve the peppers with feta filling while still hot.
