For the Oven Melanzani, preheat the oven to 180°. Cut the tomatoes into pieces. Peel and finely chop the onion and garlic. Sauté in a little olive oil and add tomatoes. Let it boil down for about 15 minutes. Season with salt, pepper and Italian herbs.
Cut the melanzani into slices and place on a baking tray lined with baking paper. Place two tablespoons of tomato sugo on each slice and cover with a slice of mozzarella. Place in the oven for about 20 minutes – until the cheese is golden brown. Remove and place a fresh basil leaf on top of each turret. Serve the oven melanzani immediately.
