Instructions:

For the Asian style egg noodles, boil the egg noodles according to instructions for about 4 minutes until soft, drain, rinse in cold water and drain. Cut chicken breast or ham into small cubes or strips. Halve or quarter the white of the spring onions, cut mushrooms smaller if needed. Peel ginger and finely chop as well as garlic. Cut pak choi into small pieces.

Heat a little oil in a wok or large skillet and, one by one, first briefly sauté chicken breast over high heat, stir in fresh mushrooms and sauté vigorously. Then add garlic, ginger, spring onions, peppers, pak choi, bean sprouts as well as shrimps and fry briefly until the shrimps change color. Flavor with soy sauce, fish sauce and sesame oil.

Stir in the drained noodles, allow to warm briefly and season everything again. Serve the Asian-style egg noodles in Chinese bowls and sprinkle with freshly chopped coriander or parsley.
