Sift the flour into a large enough bowl and mix in the grated coconut. Season with salt, sugar and cayenne pepper and mix everything together well. Gradually incorporate water until a smooth dough is formed. Divide the dough into 6 pieces. Form each piece of dough into a ball and roll out on a lightly floured surface into patties about 8 inches in size. Heat the fat in a high frying pan and toast the patties in batches until light brown on both sides. Bring to the table immediately.
For the coconut patties, it is recommended to buy a whole nut and grate the pulp yourself – only this will bring the desired good taste. When buying, make sure that the sloshing of the liquid inside is easily heard, then the nut is still fresh.
