Baked Mashed Potatoes

Preheat the oven to 200 degrees (hot air 180 degrees). Rinse the potatoes and remove the skin. Put them in salted water and drain. Heat the milk to lukewarm and press the potatoes with a potato press. Add the cold butter and lukewarm milk to the potato mixture form and stir through. Season with salt, cayenne pepper and fresh nutmeg.

Grate Gruyère and Parmesan, set aside 1 tbsp Parmesan, stir the rest with the fresh cream into the potato mixture. Grease a gratin dish with butter and dust with flour. Whip the egg whites with a pinch of salt until stiff. First fold 1/3 of the egg whites into the potato mixture, then slowly fold in the rest.

Pour the mixture into the gratin dish and bake in the heated oven for 35 minutes. 10 min before the end of the baking time sprinkle the remaining parmesan over the mashed potatoes.
