Instructions:

For the apple wholemeal tart, first separate the eggs and beat the egg whites with a pinch of salt until stiff.

Beat egg yolks, 5 tablespoons granulated sugar, poppy seed oil and lemon zest until foamy. Mix lemon juice, rum and wholemeal spelt flour into the yolk mixture.

Fold in beaten egg whites and pour into a greased and floured springform pan (diameter 20 cm) and cover with apple pieces. Sprinkle with 2 tablespoons granulated sugar and bake at approx. 170 °C for 30 minutes.

Cover the apple-wholemeal cake with aluminum foil when the apple-sugar layer is nicely browned and bake until done.
