Instructions:

Mix flour and salt in a large bowl until well blended.

Slowly add eggs and coconut milk and mix until there are no lumps in the dough.

Let the dough rest for 5 minutes.

Heat a shallow pan, preferably coated, and lightly drizzle with a little oil.

Spread some of the dough in thin strands in the pan. It should not form a closed surface.

When the surface becomes firm, turn the roti over.

Continue in this manner until all the batter is used. Always make sure that there is some oil in the pan, as the dough likes to soak it up.

Serve hot with any sauces you like.
