For the blackberry pancakes, whisk the eggs with the milk in a bowl and add the salt. Stir in the flour until a thick batter is formed.

Let the dough rise a little. If the dough is too thick, thin it with a little water or milk. Brush a frying pan with oil and heat it.

Pour a little batter (about 1 scoop) into the center of the pan and swirl to distribute the batter evenly in the pan.

Spread a small handful of huckleberries on top of the batter. When the bottom of the pancake is brown turn it over, continue baking briefly (huckleberries burn very easily) and remove from the pan.

Place on a plate and keep warm in the oven. Repeat until the batter is used up. Sprinkle the blackberry pancakes with sugar and serve.
