Season the tomato jam with pepper and salt. Separate the sweet potato from the skin, shave it, fry it in fat and add salt. Sauté the farmer greens in a frying pan with butter. Make a puree of some of the pitted cherries with veal stock and put it on the table with the spiced tomato jam as a sauce.
Offer the potatoes as a bed on a plate. Put the fillet strips with the sausages on top and offer the greens around.
