Peter Kümmel: The name Lattwerg/Lattwerge/Lattwersch is also common in southern Hesse. In central Hesse the dish is called Hoink, in some areas also Huink, Henk or Hink.
Rinse the plums, remove the seeds and whisk. Mix all ingredients, fill into the fat pan of the oven or possibly a large roaster. Cook in the oven at 175 °C for 75 minutes until thick. Now mix the quantity well, remove the cinnamon stick and fill hot into jars or possibly earthenware pots.
