For wind baking, beat egg whites until stiff, gradually add sugar and vanilla sugar and beat again until very stiff.

Pour the mixture into a piping bag and pipe elongated discs, circles or dots onto a baking sheet lined with baking paper.

Allow the wind baked pastry to dry more than bake in a lukewarm oven.
