For the liver dumplings, chop onion and fry lightly in oil. Soak the rolls or white bread in water and then squeeze well.

Cut the liver into small cubes and, together with the onions and the spices, put it through a meat grinder or grind it with a Moulinette (make a farce).

Finally, add the bread rolls and bind with the eggs. Firm it up with the breadcrumbs and let it rest in a cool place for about 30 minutes.

Form dumplings or gnocchi with 2 tablespoons and cook either in salted water or directly in clear soup.
