For the mezzepenne alla Salo, first cook the pasta in salted water until al dente.

Gently sauté the finely chopped shallot in enough butter, deglaze with white wine and let it boil again. Then reduce, add Noilly Prat, and reduce again until almost all the liquid has boiled down.

In the meantime, cut a small zucchetti into fine strips, dust with flour and fry hot in olive oil. They should get nice and crispy. Set aside.

Sprinkle saffron into the reduced sauce and add whipping cream, simmer very slightly and add smoked salmon cut into strips. Simmer gently for two or three minutes, then add seasoning.

At the very end, when the pasta is already drained, add cooked shrimps, but do not boil them anymore! Mix the zucchetti strips with the mezzepenne alla salo.
