For the smoked salmon and shrimp sauce, boil down the wine with the onion pieces and bay leaf to about 3 tablespoons of liquid and strain.
Add the stock to the reduction, mix the cream with flour and thicken the sauce with it. Let it boil for about 10 minutes.
Cut the smoked salmon into strips and add to the sauce with the shrimps and season.
Cook the black noodles in salted water until al dente and strain.
Arrange the black noodles on a plate, spread the sauce on top and garnish with dill.
