Make pork belly and veal covered with water in a suitable cooking pot. Ready meat cut into pieces suitable for the mincer. Cut pork liver into narrow strips. Pour boiling clear soup from meat pot and stir. When the liver is light through and through, put it together with the meat through the fine disk of the meat grinder. Pour in as much clear soup as necessary until everything is viscous together. Season with nutmeg, salt, pepper and mayoran. Fill into jars, but only up to 2/3 height and boil for 90 min. at 98 °C.
