For the Melanzani Florets, cut the melanzani lengthwise (but do not cut all the way through so that the slices do not fall apart).
Sprinkle with a little salt and pour water over them. Set aside for 1/2 hour so that the bitter taste disappears.
In the meantime, chop bell bell pepper, cherry tomatoes, chives, dill and cilantro. Mix all ingredients together and sprinkle with salt and pepper.
Fill the melanzani flowers with the mixture and place them in a pan or baking dish coated with olive oil.
Heat the oven to 180 degrees and bake the melanzani flowers for about 45 minutes.
Sprinkle the chopped feta on top and bake for another 15-20 minutes. Serve the melanzani flowers.
