Instructions:

For the dough, knead a smooth yeast dough from the given ingredients and let it rest for about 30-45 minutes.

In the meantime, heat the milk, butter, sugar, cinnamon and lemon flavoring for the filling. Then briefly steam the ground poppy seeds. Stir in the breadcrumbs and the rum flavoring and remove the mixture from the heat. Finally fold in the beaten egg white.

Roll out the dough and coat with the poppy seed filling. Roll up and place in a greased loaf pan.

Bake the strudel at 180 °C until golden brown.
