For zucchini with soy filling, bring soup to a boil, sprinkle in soy crumbs, remove from heat and allow to swell.
Heat oil in a pan and fry onion cubes. Cut zucchini in half lengthwise and hollow out. Add soy mince to onions, salt and pepper.
Fill the mixture into the zucchini, sprinkle with cheese and bake in a greased, covered pan for about 20 minutes in the oven.
Arrange the baked zucchini with soy filling and serve.
