For the woodruff asparagus soup, first peel the asparagus and cut off about 2 cm at the bottom. Cut the rest into bite-sized pieces. Save the peels. Peel and finely dice the onion. Also peel and finely dice the potatoes.

Boil about a liter of water with the asparagus peels, woodruff, sugar and salt. Then turn off the heat and let the broth stand for about 10 minutes. Then empty it through a sieve.

Sauté the onions in a little oil. Add the asparagus and potatoes. Deglaze with the broth and add the whipped cream. Put the lid on and simmer for about 20 minutes. Then season with freshly grated nutmeg, lemon juice, salt and pepper.

Puree the woodruff asparagus soup and serve.
