For the vegan berry cake, mix the flour with the cream of tartar powder and the vanilla sugar. Now gradually fold in the apple, lime zest, grated ginger, mashed bananas and soy yogurt carefully until a homogeneous fluffy dough is formed (Attention: better not mix with a hand mixer, otherwise the cake will not be so fluffy).

Preheat the oven to 180° hot air. Grease the cake pan well and spread the batter evenly in it.

Pluck the currant, wash and dry well or use other berries, such as blackberries, raspberries, etc., as desired. Spread the currant evenly over the cake batter.

Bake the vegan berry cake in the preheated oven for about 45-50 minutes.
