For the Transylvanian style goulash soup, remove the tendons and suet from the mutton. Wash the meat and scald it with hot vinegar water.
Now it is soaked in hot water for 6 to 8 minutes and then cut into small cubes. Put them in 2 liters of cold water to boil. Add the tied spices, cleaned onion as well as garlic to the soup. Salt the soup and let it simmer.
Meanwhile, wash and peel the soup vegetables, cut them into finger-thick pieces and add them to the simmering soup.
When the meat and vegetables are almost soft, add the diced potatoes and savoy cabbage cut into 8 pieces.
Do not stir the soup.
When all the ingredients are cooked, remove the spices.
Serve the Transylvanian style goulash soup sprinkled with fresh parsley.
