For the tomato cold dish, wash the tomatoes, remove the stalk and chop the tomatoes. Peel the orange, fillet it and cut it into small pieces and put them into the blender.

Wash and dry the basil and pluck the leaves. Put some leaves aside for decoration. Peel the garlic clove. Add garlic, basil, olive oil and white wine vinegar to the blender and blend until smooth. Pass through a fine sieve and season with salt and pepper.

Chop the Black Forest Ham into thin strips and serve on the tomato cold dish. Decorate with basil.
