The sea bass is gutted and washed, seasoned with pepper and garnished with the bay leaves and thyme. Place it on an oven tray. Cover it with damp coarse salt, recreating the shapes of the fish. Now bake it in the heated oven at 240 °C for about 45 min. Serve it with the juice of a lemon and melted butter.
