For the lamb stew, sauté onion in oil. Add lamb, brown a little, season with salt and pepper and deglaze with white wine, simmer briefly, add water and simmer covered on low heat for 20-30 minutes.

Add caraway seeds, cabbage and chestnuts and season with salt and pepper.

Simmer the lamb stew again on low heat for 50-60 minutes.
