Rinse the potatoes, remove the skin and grate finely. Chop the sauerkraut with a kitchen knife and mix with the potatoes and eggs.
Season, bake small cakes in hot clarified butter and keep warm in the stove.
Mix sour cream with pressed garlic, paprika and Tabasco, fold in chives and season. Serve with the cakes.
Serve with smoked salmon or smoked duck breast.
Our tip: Always use fresh chives if possible!
